My goodness, we have SO much passion fruit right now!! Bags and bags full to the brim! I’ve been making lots of mango, pineapple and passion fruit smoothies, with coconut water. Yum!!!
They’re soooo good. Foamy, frothy and heavenly. With the seeds strained out of course.
Passion fruit is very good for you, with lots of antioxidants, vitamin A, C, potassium and fiber (if you eat the seeds)
Since we have so much, I’ve been freezing the passion fruit juice into icy tart treats for later. I cut the tops off, scoop out the fruit with a spoon, blend them up, strain the seeds out, and pour into ice cube trays to freeze.
As soon as the cubes are frozen, just pop them out and put them in a bag or container in your freezer to use in upcoming smoothies, drinks or desserts! They’re such a nice pop of flavor. Delicious and so refreshing! Now you can be passionate all year round 🙂
